Chicken chaap recipe | चिकन चाप | Restaurant style Chicken Chaap at Home by Sandipta's Cookery

Chicken chaap is an adopted Nawabi dish which is renowned in Kolkata due to historical reign of Bengal Nawabs.This is a Mughal inspired recipe where the marinated chicken will be slowly cooked in a thick oily gravy. The rich flavor of the gravy and the soft juicy moist chicken make this dish not only unique, but also very tasty.

Preparation time - 25 minute

Cooking time - 35 minute

Serve - 2

Ingredients :-

2 Leg piece

4-5 Green chili

8-10 Garlic

1 inch piece Ginger

1 Onion

2 tsp Poppy seeds

8-10 Cashew nuts

1 tsp Melon seeds

1 cup Yogurt

2 drops Mitha Attar

2 drops Rose water

¾ tsp Keora water

1 tsp Sattuu / Roasted gram flour

2 tsp Kashmiri red chilli

1 tsp Turmeric

3 tsp Dalda

3 tsp Ghee

3 tsp Refined oil

3 tsp Lukewarm milk

5-6 Kesar

Salt and sugar to taste

*Soak cashew nuts and melon seeds in water for 10-15 minutes.

** Give saffron in lukewarm milk.

Ingredients of Chaap Masala

5-6 pieces Small cardamom

1 inch Cinnamon

4-5 Cloves

1 tsp Cumin seeds

1 tsp White pepper

½ tsp Nutmeg

1 piece small Mace

These ingredients are crushed together by frying in a dry roast.

Procedure :-

1.In a mixing jar, mix together the poppy seeds, cashew nuts, melon seeds, ginger, garlic, onion, green chilli and yogurt. Make a smooth paste.

2.Take leg piece in a pot, marinate it with 1 tablespoon of prepared chaap masala, turmeric, kashmiri red chilli powder, mittha attar , rose and keora water, sattu, salt and sugar to taste, a little white oil and yogurt mixture. Then refrigerate it for 8 hours.
