History of Ledikeni

Ledikeni or Lady Kenny or Pantua is a popular Indian sweet originated from West Bengal, India. It is a light fried reddish-brown sweet ball made of Chhena and flour and soaked in sugar syrup. Ledikeni is named after Lady Canning, the wife of Charles Canning, the Governor-General of India during 1856-62.

Gulab Jamun or Ledikeni or Pantua difference?

Gulab Jamun is one of the most popular Indian sweet worldwide. The basic ingredients that go into a gulab jamun are khowa or mawa along with maida. There are of course, many variations of this recipe.

Whereas, Pantua or Ledikeni looks like a gulab jamun but is made with different ingredients. It are made with chhana (chhena) based sweet. Chhana or homemade paneer is quite an essential ingredient in a Bengali household.

Ingredients :-

500 gm Cottage cheese

25 gm Semolina

1 tsp Ghee

500 gm Sugar

Procedure :-

1.In a bowl, take cottage cheese, semolina and ghee, mix well.

2.Keep mashing until it becomes pretty smooth.

3.Take a piece from the dough and make small round balls out of it. Make sure there are no cracks otherwise the balls may break into the sugar syrup.

4.Heat oil in a frying pan and fry the balls until brown.

5.Heat water in another pan and make syrup with sugar in it.

6.Put the balls in the sugar syrup and let them soak for a day before serving.

ছানা ৫০০ গ্রাম

সুজি ২৫ গ্রাম

ঘী ১ টেবিল চামচ

চিনি ৫০০ গ্রাম

পদ্ধতি -

১. একটি পাত্রে ছানা, সুজি এবং ঘি নিন,ভালোভাবে মিশিয়ে নিন।

২.যতক্ষণ না এটি সুন্দর মসৃণ হয়ে যায় ,ততক্ষণ ম্যাশ করতে থাকুন।
