Rasomalai or Ras malai is a very popular dessert in Eastern India. Rasmalai is a classic Indian festive dessert made with milk. ‘Raso’ means “juice” & Malai means "cream". Rasmalai literally means juicy milk cream.

Preparation time - 20 minute

Cooking time - 45 minute

Ingredients -

For the rasomalai balls -

1 liter Whole milk

4 tsp Lemon juice

4 cups Water

1 cup Sugar

For the syrup -

½ tsp Cardamom powder

3-4 tsp Sugar

3.½ cup Water

For the Rabdi -

500ml Full fat milk

½ tsp Cardamom powder

Finely chopped dry fruits

Saffron a pinch

Procedure -

Making balls -

1.firstly, boil milk,additionally add lemon juice and stir till milk curdles completely.

2.Drain the curdled milk and squeeze off excess water.

3.after 30 minutes, start to knead the paneer for 10 minutes.

4.Make small balls and flatten. keep aside.

Making sugar syrup -

1.In a pan take sugar and water,boil the syrup for 10 minutes.

2.Then add the prepared balls and cover and boil for 15 minutes.

3. squeeze of sugar syrup.

Making Rabdi -

1.Take a pan, heat milk and get to a boil.

once a layer of cream is formed over the milk, stick it to sides of vessel.

2.Repeat the process for 4- 5 times or till milk reduces to one-third.

3.Add sugar, cardamom powder and saffron,give a good mix and get to boil.

also scrape off the collected cream from sides and give a good stir.
